Is there a full schedule somewhere of all the sims in a season?

That's a good question - something that would make sense to add. I'll put this on a feature list.

The immediate future will conclude the late free agency on Friday, training camp on Saturday, Monday will be the midweek before the first pre-season game, and then the first game will be Tuesday. Games alternate between weeks and midweeks, 6 sims per week with Sundays off, so the games will run on the same 3 days of the week all season long.

There is one final sim after the bowl game for the end of the season, where you can do any final contract renegotiations, followed by 6 early free agency sims, and then the draft takes 6 days. After the draft, it's back to late free agency, and the cycle continues.

BTW, coaches can be hired at any time. I think it's mentioned in the tour, if just briefly, but you can steal another team's coach during early free agency if you are offering him a promotion (i.e. a position coach to a coordinator or head coach, or a coordinator to head coach)

Your player's attributes improve based on his coaches - mostly his head coach, then with less weight his coordinator, then a little less weight for his position coach. So, some players won't actually get to their max in an area if their coaches above them don't have any skill in it either.
